French Toast
RECIPE COURTESY OF ALTON BROWN

Yield: 4 servings
Ingredients
1 cup half-and-half
3 large eggs
2 tablespoons honey, warmed in microwave for 20 seconds
1/4 teaspoon salt
8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread
4 tablespoons butter
Directions
In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.
Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.
Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

  • I let the bread soak all night. Only, you have to use a spatula to get them out of the soaking pan... since it becomes liquid bread. Then fried in butter to solidify the outside and then baked.

  • okay im sorry.. but I make french toast that is crispy on the outside and creamy on the inside every time I make it. I literally just use a couple eggs and milk, dip the bread and fry it with some butter in a pan, takes like 10 mins tops. This is just WAY to much for some french toast lol... Besides that he doesn't use peanut butter. Alton, you have to put peanut butter and syrup on your french toast. Nothing better!

  • I would only want 1 egg since I hate eggy French Toast. Also I saw Gordon Ramsey say not to crack the eggs directly into the mix because of possible shells. And letting them sit 30 seconds is a no no. The reason he has to stick them into the oven after is because he drenched them in the mix!

  • My french toast is faster for myself one large egg half the volume of with whole milk and some cinnamon wisked The bread would be Arnold's Brick oven bread laid out in the fridge to dry it out I do this first before prep. The other thing I do is prep a salty breakfast meat Smoked Ham or a pork roll, Bacon, Turkey Bacon cause will I drizzle on some maple syrup on the toast. If I nailed it the bread will have some crunch at least on the edges But really prep time less than 10 minutes. Will the fats, salts and textures at least for me really good eats !

  • I buy thick cut Texas toast bread from Kroger. Every time I buy it, it's just stale enough to make perfect french toast right out of the bag. Also, I add a tiny bit of cinnamon powder and a tbsp of vanilla flavor to the custard and it gives it amazing flavor. Stack em, add some butter, pour some maple syrup on top, serve with strawberries and blueberries, and it's breakfast perfection.

  • This technique is a game changer. I didn't follow the custard recipe, but I did do everything else in the video and it WORKS. If you are here to complain that there is no cinnamon in the batter, don't forget that you can just add it?? You don't have to follow a recipe exactly guys.

    • @Roberts Email honestly, I used a recipe for french toast casserole from Ree Drummond that I found on Google the other day, and it turned out real good! It was l like... Milk, heavy cream (I had half and half so I used that), eggs, white sugar, brown sugar, vanilla. I added cinnamon AND triple sec, because I like a lil orange flavor in my french toast.

I found the video last night and realized I had the ingredients (I did add a little cinnamon) so I did what he said about setting it up beforehand, and it came out looking and tasting fantastic. And nothing fell apart, which is a first. (I only had regular store sandwich bread but it still came out *really* well.)
